Elk Burger Sweet Potato Bowls

I’m back from Colorado, and the freezer is officially stocked with 254lbs. of elk! This year I have accomplished my biggest elk to date. I think I’m still shaking from the excitement. The thrill of the hunt still has me shaking, and I couldn’t wait to put some of that fresh meat to use in the kitchen.
If you’re a burger lover looking to switch things up, this recipe is for you. These Elk Burger Sweet Potato Bowls are hearty, healthy, and a fantastic way to highlight wild game. The roasted sweet potatoes bring a natural sweetness that pairs perfectly with the savory elk. Plus, the best part? It’s super simple to make, making it perfect for busy nights.

Ingredients:

  • 1 lb. ground elk

  • 2 large sweet potatoes

  • Olive oil

  • Garlic powder

  • Lawry’s Seasoned Salt

  • Paprika

  • Lettuce, thinly sliced

  • Pickles, chopped

  • Red onion, diced

  • Shredded cheese

Instructions:

1. Prep the Sweet Potatoes:

• Peel and dice the sweet potatoes into bite-sized cubes. Place them in a large bowl, drizzle with olive oil, and season generously with garlic powder, Lawry’s Seasoned Salt, and paprika. Toss until evenly coated.


2. Roast the Sweet Potatoes:

• Preheat your oven to 400°F. Spread the sweet potatoes on a baking sheet in a single layer. Roast for about 40 minutes, flipping halfway through, until they’re tender on the inside and crispy on the outside.


3. Cook the Elk:

• While the potatoes are roasting, heat a skillet over medium heat. Add the ground elk and cook until browned, breaking it up with a spoon. Season with garlic powder, Lawry’s Seasoned Salt, and paprika for a flavorful finish.


4. Prepare the Toppings:

• Thinly slice the lettuce, chop the pickles, dice the red onion, and set out your shredded cheese.


5. Assemble the Bowls:

• Start with a generous base of roasted sweet potatoes. Top with the seasoned ground elk, lettuce, red onion, pickles and cheese.


6. Add Your Favorite Sauce:

• Finish your bowl with ketchup, mustard, or sesame seeds. Personally, I love drizzling mine with Mississippi comeback sauce for a tangy, creamy kick.
