This is a segment called "Killing, Cleaning & Cooking!" WHAT A DAY! In my family, bonding means heading outdoors—whether we’re chasing game or casting lines. One of my favorite recent moments was when my brother called to take me and my boyfriend out for early goose season.
This month’s Wild Game Wednesday recipe is a special one: Ground Goose Baked Tacos. After a morning hunt, my brother was off to Saskatchewan so I cleaned the birds with my boyfriend, and brainstormed a unique way of how to cook the goose. Finally, the kitchen became the last chapter of the day, where these tacos came to life.
It’s truly a gift to provide for myself, to be connected to nature, and to transform my harvest into something delicious. Every step reminds me of the beauty of the hunt and the gratitude that follows.

Ingredients:
1 lb. ground geese
1 tbsp. olive oil
1 cup yellow onion, diced
3 garlic cloves, minced
1 packet taco seasoning
1/4 cup beef broth
7-10 corn tortillas
Refried beans
Shredded Mexican cheese
Creamy Jalapeño Sauce:
Place all ingredients in a blender and blend until smooth and sauce-like in consistency.
1/4 cup pickled jalapeños, drained
1/2 cup plan Greek yogurt
1 fresh lime, juiced
1 cup cilantro
3 tbsp. olive oil
Salt to taste
2 tbsp. water
Directions:
Heat 1 tbsp olive oil in a pan over medium heat.
Add the minced garlic and diced onion, sautéing until softened (about 3-4 minutes).
Once soften, add the ground goose and cook until browned.
Stir in the taco seasoning and beef broth, mixing until well combined.
Remove from heat and set aside.
Preheat oven to 375F degrees.
Heat tortillas for 10 seconds in microwave to make them more pliable.
Lay the tortillas out on a sheet pan.
Spread a layer of refried beans on one half of each tortilla.
Spoon the seasoned ground goose mixture over the beans.
Sprinkle shredded cheese over the filling.
Fold the tortillas in half and lightly spray the tops with olive oil spray.
Place in oven and bake for 15 minutes.
Switch to broil for 2-3 minutes to get the tortillas crispy and golden.
While the tacos bake, place all sauce ingredients in a blender and blend until smooth and sauce-like. Adjust salt to taste.
Remove tacos from the oven and drizzle with the creamy jalapeño sauce.
Garnish with fresh cilantro.
Serve hot and savor the bold, satisfying flavors of these tacos—straight from the field to your plate.
