I can almost guarantee this is a recipe you will crave everyday of the week. I have been seeing them all over the internet and I cannot believe these did not become viral years ago. The combination of a hamburger and a taco is a must try that takes effortless time!
The sound of a tortilla instead of a hamburger bun was a bit strange at first but I must stay I prefer a tortilla over a bun now (and hey, less calories too). The crisp tortilla and a browned thin layer of wild game topped with all your favorite hamburger toppings is just amazing.

Ingredients:
6 flour tortillas
6 slices yellow American cheese
1.5 lb. ground antelope
1/2 cup thinly shredded lettuce
1/2 cup chopped onion
1/2 cup sliced dill pickle
1 tsp. McCormick hamburger seasoning
1/2 cup Italian breadcrumbs
1/2 tsp. liquid smoke
1/2 tsp. garlic powder (for burger mixture)
1 cup high temp pepper jack cheese
Kinders woodfired garlic seasoning
1 cup mayonnaise
1/4 cup ketchup
1/4 cup chili sauce
1 tsp. Dijon mustard
1 tsp. onion powder
1 tsp. garlic powder (for Mississippi Comeback Sauce)
2 tsp. Worcestershire sauce
1/2 tsp. black pepper
1 tsp. Franks Red Hot
1/4 cup olive oil
Juice of 1 lemon
Directions:
Mississippi Comeback Sauce
This sauce is great to top your burger with and also amazing to dip fries, onion rings, etc. into!
Add mayonnaise, ketchup, chili sauce, Dijon mustard, onion powder, garlic powder, Worcestershire, black pepper, Franks, olive oil and juice of lemon to a bowl.
Whisk together until all the olive oil has blended together.
Cover and place in refrigerator for 1 hour.
Smash burger
In a bowl combine together ground antelope, hamburger seasoning, breadcrumbs, liquid smoke, garlic powder and high temperature cheese.
Place six tortillas on the counter and scoop (ice cream scooper works great) the mixture onto the center of each tortilla.
Use either your hand or spoons to press the mixture evenly across the tortilla.
Top each one with a few sprinkles of Kinders seasoning.
Bring a cast iron skillet to medium heat and melt a teaspoon of butter.
Once butter has melted place the tortilla with the burger side down. Since they are thin they will cook fast.
Optional- to add flavor to the tortilla sprinkle lightly with garlic salt or onion powder.
Once the meat has cooked flip over and add cheese, allow it to melt.
Remove from heat and top with onions, lettuce, pickles and Mississippi Comeback Sauce.
