Pan Seared Backstraps with Gorgonzola Cream Sauce

Updated: Oct 15, 2023

No need to go to a steak house to enjoy a juicy steak, cooked to perfection!
A family friend of mine made this Gorgonzola sauce on Christmas Eve and I just had to try it myself. For all my blue cheese haters, I promise this tastes nothing like it! I would know because I strongly dislike blue cheese myself.

Prep time: 10 minutes

Cook time: 35 minutes

Total time: 45 minutes

Ingredients:

  • 2 cups heavy whipping cream

  • 2 ounces crumbly Gorgonzola cheese

  • 2 tablespoons freshly grated Parmesan

  • Salt and pepper to taste

  • Dash of garlic powder, optional

Directions:

  1. Bring heavy cream to full boil in medium size saucepan over medium heat. Then, continue to boil for 30-35 minutes or until thickened like a white sauce, stirring occasionally.

  2. While waiting for cream to thicken. Prepare and cook your steak as you'd like. I recommend one of my previous recipes: https://www.bloomoutdoorscompany.com/post/mouth-watering-venison-backstrap-s-with-garlic-herb-butter

  3. When cream has thickened remove from heat and add the Gorgonzola, Parmesan, salt, pepper and garlic powder. Whisk rapidly until cheese has completely melted.

  4. Layer over your steak, serve and enjoy!
