Franks RedHot Perch

This week the fish were hitting and my brother and father cooked a fish fry dinner for my family. The recipe was shared to us from captain Pete at Hook One Bait & Tackle/ Charters.

Ingredients:

  • Perch fish

  • 3 round eggs

  • Salt and pepper

  • Drakes Crispy Frymix

  • Peanut oil

  • RedHot

Directions:

  1. Prepare your fish by cleaning them under cold water, pat dry and set aside.

  2. Add 1 cup RedHot to a bowl.

  3. Mix together eggs, salt and pepper to a separate bowl.

  4. Gently press perch into RedHot and then coat both sides in Drakes.

  5. For a non "spicy" way you will take the perch and gently press into egg wash and then coat both sides in Drakes.

  6. Once both kind of perch are prepared deep fry in peanut oil at 400F till a perfect crispy gold.

  7. Enjoy with lemon or tarter sauce.
