Antelope Chili

This recipe may be easy, but it definitely isn't lacking flavor! It only takes 15 minutes of hands- on cook time. Their is no better chili than wild game chili and this easily can be replaced with venison or elk.

Ingredients:

  • 3 tbsp. olive oil

  • 1 medium sized yellow onion, diced

  • 4 cloves garlic, minced

  • 1 lb. ground antelope

  • 2 10 oz. diced tomatoes with green chilies (I used a manual food chopper to dice even smaller)

  • 1 15.5 oz. can chili beans

  • 1 15.5 oz. can kidney beans

  • 1 6 oz. can tomato paste

  • 2 cups beef broth

  • 1 packet Kinders woodfire chili seasoning

  • "Slap Ya Mama"- measure with ya' heart


Directions:

  1. In a large skillet heat olive oil, add onion, garlic and antelope. Cook until the antelope is evenly brown and no longer pink.

  2. Transport cooked antelope to crockpot.

  3. Add in diced tomatoes, chili beans, kidney beans, tomatoe paste, beef broth and seasoning.

  4. Cover with lid and cook on low for two hours, stirring occasionally.

  5. Serve. Toppings may include shredded cheese, Saltine crackers, sour cream or scallions. Enjoy!
