Ingredients:
1 lb. ground antelope
1 tbsp. butter
1 small onion, thinly sliced (I used both red and yellow onions)
1 tbsp. Worcestershire sauce
2 tsp. onion powder
2 tsp. garlic powder
3/4 cup beef broth
1 tbsp. cornstarch
2 tbsp. ketchup
Salt and pepper to taste
Sliced cheese of choice (Provolone, American, or Cheddar work well)
Buns of choice (hoagie rolls or hamburger buns)
Directions:
In a large skillet, melt butter over medium heat. Add onion and cook until it becomes translucent, about 5 minutes.
Add the antelope to the skillet with the onions. Cook until the antelope is browned, breaking it up as it cooks. Turn heat to low once browned.
In a small bowl, whisk the garlic powder, onion powder and cornstarch into the beef broth until fully dissolved. Then add in Worcestershire sauce and ketchup and mix.
Turn heat back to a medium- heat and pour the beef broth mixture into the skillet with the antelope. Salt and pepper to taste over everything and allow to simmer to thicken the sauce.
Then, turn the heat down to low and place the slices of cheese on top. Cover with a lid to melt the cheese.
Serve on buns and enjoy.
